Red Lentil Soup


Easy Home Cooked Food doesn't come very much easier than our Lentil Soup recipe. This is one of my favourite winter meals and it is amazing with a crusty bread roll or two. This recipe is so easy to prepare and make that you'll wonder why you have never done it before.


There are just three main ingredients to this recipe, making it ideal if there are not many vegetables in your store cupboard or fridge. Other veggies can be added, such as onions or celery. As it is, however, this simple lentil soup is very filling.


This delicious lentil soup is low in calories and fat, and it delivers three of your five-a-day.



Ingredients



Serves 4, approximately 219 calories per serving.


  • 2l vegetable stock - vegetable Oxo cubes work too (or something similar)

  • 150g red lentils

  • 6 carrots, finely chopped

  • 2 medium leeks, sliced (about 300g)

  • Salt and pepper to taste

  • One small handful of chopped parsley, to serve



Method



  • Heat the stock in a large pan and add the lentils. Bring to a boil and allow the lentils to soften for a few minutes.

  • Add the chopped carrots and sliced leeks, and season with salt and pepper (unless you don't like it, of course). Bring the pan back to a boil, then immediately reduce the heat. Cover the pan and simmer for 45 mins-1 hr until the lentils have broken down.

  • Scatter over the parsley and serve with buttered bread or a crusty roll, if you like.
