This Easy Spanish Rice Recipe is amazing on cold days or when you just fancy cooking something up that is quick, easy and tasty. Preparation time takes as little as 10 minutes if you take your time, or 5 minutes if you just want to get it done.
You can use freshly cooked rice if you prefer, as opposed to microwave rice, but this obviously adds to the total cook time of your easy home cooked food.
Easy Spanish Rice is one of our favourite comfort foods and it can be as spicy or mild as you like; just add chilli flakes while you are cooking if you want your rice to have a bit of a kick.

Easy Spanish Rice Ingredients
- 1 Pack of Microwave Rice
- 2 Inches of Chorizo Sausage, Sliced.
- 1 Diced Onion (yellow or red)
- 1 Sliced Pepper (any colour, but I think red has the best flavour)
- 1 Chicken OXO Cube
- Cilli Flakes (optional)
Method
- Fry the diced onion and sliced pepper in butter. When these are nearly cooked add the sliced chorizo.
- Dissolve the OXO cube in 1 quarter pint of boiling water and add to the pan with the microwave rice. Continually stir, and cook until the stock has almost evaporated.
- Serve with a flourish of your cape and perhaps a garnish of coriander.
As you can see, there are only two steps that need to be followed for an outrageously delicious meal.
