This Simple Egg Fried Rice dish can be a base for slightly more 'complex' meals. As it is, this is great as a snack or a quick bite to eat for lunch.

Simple Egg Fried Rice ingredients
- Uncooked rice, 185 grams
- 1 large egg
- Diced red onion, half
- 1 tablespoon olive oil
The method to cooking Simple Egg Fried Rice
The method could not be any easier!
- Cook the rice according to pack instructions. Once done, drain and put to one side...
- Heat the oil in a non-stick pan.
- Once the oil is hot enough, saute the onions.
- Whisk an egg then add the cooked rice to the pan, briskly stirring in the beaten egg. Once the egg is cooked and the rice is hot - it is ready to serve.
There you are, Simple Egg Fried Rice - it doesn't get much simpler than this. Variations that you could try include adding diced or sliced peppers to the pan when cooking the onions. Diced, cooked ham could be included too, as well as mushrooms, spring onions, your favourite spices and sliced chorizo sausage...
The great thing about using this as a base is that you can take it in multiple directions, depending on what you have in your fridge and/or cupboard.
